Crispy iced oatmeal cookies

A homemade version of a storebought classic.

Ingredients

  • (37.5g) oats
  • (41g) brown sugar
  • (16g) www flour
  • 1/8 tsp. salt
  • 1/8 tsp. baking soda
  • 1/16 tsp. baking powder
  • 1/8 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • (19.7g) coconut oil
  • (8.8g) milk
  • 1/7 (7.7g) egg
  • 1/8 tsp. vanilla
  • 1 small batch icing

Instructions

Grind in a food processor in the following order:

  1. Grind oats into a flour.
  2. Add remaining dry ingredients.
  3. Add coconut oil.
  4. Add milk, egg, and vanilla.

Once dough is formed:

  1. Chill in fridge for at least 30 minutes.
  2. Once ready to bake, separate dough into 6 equal pieces, ~22g each.
  3. Roll pieces and flatten into 1 1/2” circles.
  4. Bake at 350°F for 11-12 minutes. Allow to fully cool on a cooling rack.
  5. Top with icing.
