A classic side that is moist and tender.

Ingredients

Soaking ingredients

  • 1 1/4 c. corn meal
  • 3/4 c. flour
  • 1 c. + 2 Tbsp. milk
  • 1 Tbsp. yogurt
  • 1/2 Tbsp. apple cider vinegar

After soak

  • 2 eggs
  • 1/4 c. sugar
  • 1/4 c. oil
  • 3/4 tsp. salt
  • 2 tsp baking powder
  • 1/2 tsp. baking soda

Instructions

  1. Mix soaking ingredients until just combined. Allow to sit covered at room temperature for 2-12 hours.
  2. Once soaking is done, beat eggs in a separate bowl. Stir sugar and oil into eggs, then stir mixture into soaked ingredients.
  3. Sprinkle baking powder, baking soda, and salt onto batter. Gently fold in until fully combined.
  4. Bake in greased 8"x8" pan at 375°F for 27-33 minutes.
