Ingredients
Soaking ingredients
- 1 1/4 c. corn meal
- 3/4 c. flour
- 1 c. + 2 Tbsp. milk
- 1 Tbsp. yogurt
- 1/2 Tbsp. apple cider vinegar
After soak
- 2 eggs
- 1/4 c. sugar
- 1/4 c. oil
- 3/4 tsp. salt
- 2 tsp baking powder
- 1/2 tsp. baking soda
Instructions
- Mix soaking ingredients until just combined. Allow to sit covered at room temperature for 2-12 hours.
- Once soaking is done, beat eggs in a separate bowl. Stir sugar and oil into eggs, then stir mixture into soaked ingredients.
- Sprinkle baking powder, baking soda, and salt onto batter. Gently fold in until fully combined.
- Bake in greased 8"x8" pan at 375°F for 27-33 minutes.
