Cornbread muffins

A classic side dish great with chili, gumbo, or great on it's own with a dollop of honey.
Ingredients
Pre-soak ingredients
- 1/3 c. spelt flour
- 1/3 c. cornmeal
- 1 Tbsp. corn flour (optional)
- 3/4 tsp. flax meal
- 2/3 c. milk
- 1 Tbsp. yogurt
- 1 Tbsp. oil
- 1 Tbsp. honey
After soak
- 1 1/8 tsp. baking powder
- 1/8 tsp. baking soda
Instructions
- Mix all pre-soak ingredients. Let sit covered at room temperature for 8-24 hours.
- Gently mix in baking powder and baking soda. Pour batter evenly between 6 muffin tins.
- Bake at 350°F for 16-18 minutes, until golden on top and fully cooked through. Let cool on wire rack.
