Cornbread muffins

A classic side dish great with chili, gumbo, or great on it's own with a dollop of honey.

Ingredients

Pre-soak ingredients

  • 1/3 c. spelt flour
  • 1/3 c. cornmeal
  • 1 Tbsp. corn flour (optional)
  • 3/4 tsp. flax meal
  • 2/3 c. milk
  • 1 Tbsp. yogurt
  • 1 Tbsp. oil
  • 1 Tbsp. honey

After soak

  • 1 1/8 tsp. baking powder
  • 1/8 tsp. baking soda

Instructions

  1. Mix all pre-soak ingredients. Let sit covered at room temperature for 8-24 hours.
  2. Gently mix in baking powder and baking soda. Pour batter evenly between 6 muffin tins.
  3. Bake at 350°F for 16-18 minutes, until golden on top and fully cooked through. Let cool on wire rack.
