Classic pancakes

A classic recipe for fluffy sweet pancakes.
Ingredients
Wet ingredients
- 3/4 c. milk
- 1 Tbsp. sugar
- 1 Tbsp. oil
- 1/2 tsp. vanilla extract
- 1 egg
Dry ingredients
- 1 c. all purpose flour
- 1 1/2 tsp. baking powder
- scant 1/4 tsp. baking soda
- Pinch of salt
Instructions
- Preheat cast iron skillet over medium (4) heat for at least 5 minutes.
- While skillet is preheating, whisk wet ingredients until well combined. In another bowl, whisk dry ingredients until well combined.
- Add dry ingredients to wet ingredients and gently fold together.
- Once skillet is preheated, lightly grease with 1-2 tsp. of oil or fat.
- Pour 1/3 of the batter onto skillet. Allow to cook for ~1 1/2 to 2 minutes per side, or until lightly golden and cooked through to the center.
- Repeat with remaining batter.
Notes
To keep pancakes warm before serving, place them in a 200° oven.
