Classic pancakes

A classic recipe for fluffy sweet pancakes.


Wet ingredients

  • 3/4 c. milk
  • 1 Tbsp. sugar
  • 1 Tbsp. oil
  • 1/2 tsp. vanilla extract
  • 1 egg

Dry ingredients

  • 1 c. all purpose flour
  • 1 1/2 tsp. baking powder
  • scant 1/4 tsp. baking soda
  • Pinch of salt


  1. Preheat cast iron skillet over medium (4) heat for at least 5 minutes.
  2. While skillet is preheating, whisk wet ingredients until well combined. In another bowl, whisk dry ingredients until well combined.
  3. Add dry ingredients to wet ingredients and gently fold together.
  4. Once skillet is preheated, lightly grease with 1-2 tsp. of oil or fat.
  5. Pour 1/3 of the batter onto skillet. Allow to cook for ~1 1/2 to 2 minutes per side, or until lightly golden and cooked through to the center.
  6. Repeat with remaining batter.


To keep pancakes warm before serving, place them in a 200° oven.
