How to cook chicken wings

Rinse and pat dry

I always rinse my chicken after removing it from the package. Patting it dry allows the dry ingredients to stick and create a crispy skin.

Baking powder

This is the secret ingredient that makes a deliciously crispy skin. However, this skin is not overly crispy, as it can be if just oil is being used. Of all the methods I’ve tried, this is by far my favorite.

Salt and pepper

I used to use a lot of different spices, but just using salt and pepper is the best. It keeps it simple and allows the flavor of chicken to come through.

Bake

Put chicken pieces in a single layer on a rack on a baking sheet. Depending on how much you are making, they will probably be pretty close together. Bake for 60-70 minutes at 375° F.

Ingredients

  • 3 lbs. chicken wings
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Rinse chicken and pat dry. Add baking powder, salt, and pepper. Mix well.
  2. Lay chicken in single layer on rack on baking sheet. Bake at 400° for 50 minutes.
  3. Cover in sauce, if desired, or just serve plain.
