A classic, fudgy brownie that is chocolatey and moist.
Ingredients
- Scant 1/4 c. coconut oil
- 1/2 c. chocolate chips (+ 3 Tbsp. extra for mixing in, optional)
- 3/4 c. + 2 Tbsp. sugar
- 1 tsp. vanilla extract
- 1/2 c. + 2 Tbsp. milk
- 1 egg
- 3/4 c. flour
- 1/2 c. cocoa powder
- 1 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/8 tsp. baking soda
Instructions
- Melt coconut oil and chocolate chips. Add sugar and stir to dissolve, then mix in vanilla, milk, and egg.
- Add remaining ingredients and stir until just combined. If mixing in chocolate chips, gently fold them in.
- Pour batter into greased 8"x8" baking dish. Bake at 325°F for 30-32 minutes, until center is mostly firm. Allow brownies to cool for 10-15 minutes in the pan, then cut into 9 squares and remove from pan to cool.
