A classic, fudgy brownie that is chocolatey and moist.

Ingredients

  • Scant 1/4 c. coconut oil
  • 1/2 c. chocolate chips (+ 3 Tbsp. extra for mixing in, optional)
  • 3/4 c. + 2 Tbsp. sugar
  • 1 tsp. vanilla extract
  • 1/2 c. + 2 Tbsp. milk
  • 1 egg
  • 3/4 c. flour
  • 1/2 c. cocoa powder
  • 1 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/8 tsp. baking soda

Instructions

  1. Melt coconut oil and chocolate chips. Add sugar and stir to dissolve, then mix in vanilla, milk, and egg.
  2. Add remaining ingredients and stir until just combined. If mixing in chocolate chips, gently fold them in.
  3. Pour batter into greased 8"x8" baking dish. Bake at 325°F for 30-32 minutes, until center is mostly firm. Allow brownies to cool for 10-15 minutes in the pan, then cut into 9 squares and remove from pan to cool.
