A nutritious, grain-free snack perfect for any time.


  • 1 c. mixed nuts (I prefer walnuts, almonds, and pecans)
  • 3 pitted medjool dates
  • 1/4 tsp. vanilla extract
  • 1 tsp. water, if needed

Optional add-ins

  • 1 1/2 Tbsp. cocoa powder
  • 1 Tbsp. unsweetened shredded coconut


  1. Add nuts and dates to food processor. Pulse until finely ground and all ingredients are well incorporated.
  2. Add remaining add-ins and pulse until well combined.
  3. Form into balls, using wet hands, if needed. Store in refrigerator.
