Nut and date balls

A nutritious, grain-free snack perfect for any time.
Ingredients
- 1 c. mixed nuts (I prefer walnuts, almonds, and pecans)
- 3 pitted medjool dates
- 1/4 tsp. vanilla extract
- 1 tsp. water, if needed
Optional add-ins
- 1 1/2 Tbsp. cocoa powder
- 1 Tbsp. unsweetened shredded coconut
Instructions
- Add nuts and dates to food processor. Pulse until finely ground and all ingredients are well incorporated.
- Add remaining add-ins and pulse until well combined.
- Form into balls, using wet hands, if needed. Store in refrigerator.
