A classic, hearty muffin.
Ingredients
Date paste
- 4 dates
- Water
Wet ingredients
- 1/2 c. sourdough starter
- 1 1/4 c. milk
- 1 Tbsp. oil
- 1 tsp. molasses
- 1 tsp. honey
- 1 tsp. vanilla extract
Dry ingredients
- 1 1/2 c. wheat bran
- 3/4 c. spelt flour
- 1 Tbsp. flax meal
- 1 tsp. baking powder
- 1/4 tsp. salt
Instructions
- Put dates in a sauce pan and cover with water. Allow to simmer for 5-10 minutes until very soft. Remove from heat, pit dates, and mash.
- Combine date paste with remaining wet ingredients. Add dry ingredients and mix well. Allow to sit at room temperature for 6-8 hours until bubbly then put in the fridge.
- Once ready to bake, separate batter into 12 muffin tins. Bake at 375°F for 25-27 minutes.
