A classic, hearty muffin.

Ingredients

Date paste

  • 4 dates
  • Water

Wet ingredients

  • 1/2 c. sourdough starter
  • 1 1/4 c. milk
  • 1 Tbsp. oil
  • 1 tsp. molasses
  • 1 tsp. honey
  • 1 tsp. vanilla extract

Dry ingredients

  • 1 1/2 c. wheat bran
  • 3/4 c. spelt flour
  • 1 Tbsp. flax meal
  • 1 tsp. baking powder
  • 1/4 tsp. salt

Instructions

  1. Put dates in a sauce pan and cover with water. Allow to simmer for 5-10 minutes until very soft. Remove from heat, pit dates, and mash.
  2. Combine date paste with remaining wet ingredients. Add dry ingredients and mix well. Allow to sit at room temperature for 6-8 hours until bubbly then put in the fridge.
  3. Once ready to bake, separate batter into 12 muffin tins. Bake at 375°F for 25-27 minutes.
