A classic recipe for a classic treat.
Ingredients
Pre-soak
- 1 c. spelt flour
- 1 Tbsp. flax meal
- 2 1/2 Tbsp. milk/water
- 1 tsp. vinegar
- 1 Tbsp. oil
- 3/4 tsp. vanilla extract
- 1/4 tsp. cinnamon extract
- 1/8 tsp. each: salt, cinnamon, all spice
Remaining ingredients
- 2 Tbsp. water
- 2 medium bananas
- 1 Tbsp. honey
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
Instructions
- Mix pre-soak ingredients together in a mixing bowl. Let sit at room temperature, covered, for 8-12 hours.
- Once soaked, soften mix by stirring in 2 Tbsp. water.
- In separate bowl, mash bananas. Mix in honey.
- Stir banana mixture into pre-soak ingredients, then add in baking powder and baking soda. Gently fold in any mix-ins, if using.
- Add batter to well greased 7x4 baking dish. Bake at 375° for 50 minutes, or until lightly golden and toothpick comes out clean. Let cool in pan for 5-10 minutes, then remove and let cool on wire rack.
Notes
If using a 9x5” baking dish, simply double this recipe.
Other spices or extracts can be used, depending on desired flavor.
