Banana bread

A classic recipe for a classic treat.

Ingredients

Pre-soak

  • 1 c. spelt flour
  • 1 Tbsp. flax meal
  • 2 1/2 Tbsp. milk/water
  • 1 tsp. vinegar
  • 1 Tbsp. oil
  • 3/4 tsp. vanilla extract
  • 1/4 tsp. cinnamon extract
  • 1/8 tsp. each: salt, cinnamon, all spice

Remaining ingredients

  • 2 Tbsp. water
  • 2 medium bananas
  • 1 Tbsp. honey
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda

Instructions

  1. Mix pre-soak ingredients together in a mixing bowl. Let sit at room temperature, covered, for 8-12 hours.
  2. Once soaked, soften mix by stirring in 2 Tbsp. water.
  3. In separate bowl, mash bananas. Mix in honey.
  4. Stir banana mixture into pre-soak ingredients, then add in baking powder and baking soda. Gently fold in any mix-ins, if using.
  5. Add batter to well greased 7x4 baking dish. Bake at 375° for 50 minutes, or until lightly golden and toothpick comes out clean. Let cool in pan for 5-10 minutes, then remove and let cool on wire rack.

Notes

If using a 9x5” baking dish, simply double this recipe.

Other spices or extracts can be used, depending on desired flavor.
