The easiest, most consistent way to make quinoa in the oven.

  • 1 c. quinoa
  • 1 Tbsp. oil
  • 1/2 onion
  • 1/2 bell pepper
  • 1/2 tsp. salt
  • 1/4 tsp. cumin
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/8 tsp. cayenne
  • 1/4 tsp. dried basil
  • 1 c. water

  1. Soak quinoa in plenty of water and a splash of apple cider vinegar for 4-8 hours or until doubled in size. Drain, rinse, and store in the fridge covered overnight.
  2. Dice onion and bell pepper and mince garlic. Add oil to a pot and heat to medium (5).
  3. Sauté onion and bell pepper in oil until somewhat soft, approximately 3-4 minutes. Add spices and garlic and sauté for another minute.
  4. Add quinoa to pot and stir well. Allow to cook for about a minute or two, stirring constantly. Add water and stir well.
  5. Transfer contents of pot to a 8”x8” baking dish. Cover with tinfoil and bake 375ºF for 25 minutes.
