The easiest, most consistent way to make quinoa in the oven.
Ingredients
- 1 c. quinoa
- 1 Tbsp. oil
- 1/2 onion
- 1/2 bell pepper
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/8 tsp. cayenne
- 1/4 tsp. dried basil
- 1 c. water
Instructions
- Soak quinoa in plenty of water and a splash of apple cider vinegar for 4-8 hours or until doubled in size. Drain, rinse, and store in the fridge covered overnight.
- Dice onion and bell pepper and mince garlic. Add oil to a pot and heat to medium (5).
- Sauté onion and bell pepper in oil until somewhat soft, approximately 3-4 minutes. Add spices and garlic and sauté for another minute.
- Add quinoa to pot and stir well. Allow to cook for about a minute or two, stirring constantly. Add water and stir well.
- Transfer contents of pot to a 8”x8” baking dish. Cover with tinfoil and bake 375ºF for 25 minutes.
