African-style stewed spinach

African-style stewed spinach

A traditional way to serve spinach that is flavorful and delicious.

Ingredients

  • 2 Tbsp. palm oil
  • 16 oz. fresh spinach (or chopped frozen spinach, thawed)
  • 1 1/2 c. cooked chickpeas
  • 1 medium yellow onion
  • 3 cloves of garlic
  • 1 tomato
  • 1 Tbsp. tomato paste
  • 1/4 tsp. salt
  • 1/2 Tbsp. chili powder
  • 1/2 tsp. black pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. thyme
  • 1/4 tsp. oregano

Instructions

  1. Thinly slice half the onion and mince the garlic. Set aside.
  2. Add remaining half of onion to a food processor along with the tomato. Blend and set aside.
  3. Blanch spinach for 5-7 minutes, then roughly chop. Set aside.
  4. Heat oil in a pot over medium (5) heat. Saute onion until soft, ~5–7 minutes. Add garlic, and saute another minute.
  5. Add spices, and saute until fragrant, ~2 minutes.
  6. Add blended tomato/onion, then simmer for 7-10 minutes, stirring often.
  7. Add chickpeas and/or meat. Allow to simmer until cooked or heated through.
