
African-style stewed spinach

A traditional way to serve spinach that is flavorful and delicious.
Ingredients
- 2 Tbsp. palm oil
- 16 oz. fresh spinach (or chopped frozen spinach, thawed)
- 1 1/2 c. cooked chickpeas
- 1 medium yellow onion
- 3 cloves of garlic
- 1 tomato
- 1 Tbsp. tomato paste
- 1/4 tsp. salt
- 1/2 Tbsp. chili powder
- 1/2 tsp. black pepper
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. thyme
- 1/4 tsp. oregano
Instructions
- Thinly slice half the onion and mince the garlic. Set aside.
- Add remaining half of onion to a food processor along with the tomato. Blend and set aside.
- Blanch spinach for 5-7 minutes, then roughly chop. Set aside.
- Heat oil in a pot over medium (5) heat. Saute onion until soft, ~5–7 minutes. Add garlic, and saute another minute.
- Add spices, and saute until fragrant, ~2 minutes.
- Add blended tomato/onion, then simmer for 7-10 minutes, stirring often.
- Add chickpeas and/or meat. Allow to simmer until cooked or heated through.
